quick & easy CHICKEN PINEAPPLE FRIED RICE

Slice the Chicken

Slice the chicken breast into thin strips.

 Cook the Chicken

Heat 1 tbs of oil in a large non-stick pan (or wok) over medium heat. Add chicken strips & salt & cook until cooked through, 5-8 mins. Remove the chicken onto a clean plate.

Scramble the Eggs

Now, crack the eggs into now empty skillet & scramble until almost cooked. Remove onto the plate with chicken.

Sauté Onions & Garlic

Heat the 1 tbs oil in the skillet. Add in the onion & cook for 2 mins. Add in the garlic along with curry powder, & sauté until fragrant, about 1 min. Stir often.

Add Vegetables

Add carrots & peas & cook until vegetables are tender, another 3 mins or so.

Add the Rice

Stir in cold leftover rice. Let it sit for a min or so & then break it up with a wooden spoon, mixing with the vegetables. Cook for about 3 mins.

Stir Fry

Then pour soy sauce & fish sauce over the rice & stir-fry for a few mins.

Add Back the Ingredients

Add pineapple, the chicken & eggs & mix everything well. Cook for an additional 2-3 mins to heat everything up, stirring occasionally.

Serve & Enjoy

Remove from heat & serve hot, garnished with sliced scallions, if desired.
