EGG FRIED RICE IN INSTANT POT 

Let's make amazing Instant Pot fried rice comes together in less than 25 mins! And no leftover rice is required. Learn my tips from my recipe testing!

INGREDIENTS

white jasmine rice water soy sauce fish sauce –  toasted sesame oil garlic powder olive oil eggs scallions frozen carrots and peas

Cook the Rice

Cook the rice in the Instant Pot: Place rinsed & drained rice into the inner pot of Instant Pot.

Add Ingredients

In a 2-cup measuring cup, mix water, soy sauce, fish sauce, sesame oil & garlic powder. Add it into the rice.

Seal in the Cooker

Close the lid & make sure the valve is set to “sealing”. Set the Instant Pot to Pressure Cook/Manual for 5 mins on high.

Scramble the Eggs

To cook the eggs & veggies: Heat a skillet over medium high heat. Add oil. When the oil is hot, crack the eggs & scramble around, 1-2 mins.

Add the Vegetables

Add white part of scallions & frozen vegetables & cook for 2-3 mins, until the vegetables are thawed & heated through.

Release the Pressure

Once the IP time is up, let the pressure release naturally for 5 mins & then do quick release by turning the valve to “venting”. Then carefully open the lid.

Mix the Ingredients

Fluff the rice & then add the sautéed vegetables & eggs mixture into the rice along with green part of scallions. Gently mix everything together & serve!
