quick & easy Leftover Salmon Fried Rice

Leftover salmon fried rice is incredible versatile 15-min dinner for busy weeknights! Swap any vegetables you have on hand.


Make Scrambled Eggs

Heat a non-stick skillet, or wok, over medium high heat. Add olive oil. Once oil is shimmering, add eggs & scramble quickly. 


Add in Cooked Rice

Add cooked cold rice & cook for 2-3 mins, stirring frequently.


Add Vegetables

Stir in garlic &  then add vegetables. Cook for a min or so.


Add Salmon

Then stir in the soy sauce & sesame oil. Finally add salmon. Mix & cook until salmon is heated though. Serve immediately.
