CREAMY COCONUT SHRIMP

Make this savory, sweet coconut shrimp at home with simple ingredients and less than 30 mins! It’s dairy-free & seriously satisfying!

INGREDIENTS

coconut oi large shrimp  coconut milk  minced garlic fresh lime juice minced fresh ginger freshly grated lime zest sugar –  salt

Heat Coconut Oil

Heat the coconut oil in a large skillet over medium-high heat.

Sauté the Shrimp

Add the shrimp, & sauté for about 2-3 mins or until they’re cooked through. Then, remove the shrimp from the skillet & set them aside.

Add Coconut Milk

Add the coconut milk, garlic, lime juice, ginger, lime zest, sugar & salt to the skillet & bring the mixture to a boil over medium-high heat.

Simmer the Mixture

Reduce the heat to medium & let the mixture simmer for 5-8 mins to thicken.

Add the Shrimp

Add the shrimp back to the skillet, cook for another 2-3 mins.

Serve

Serve creamy coconut shrimp over steamed white rice with a few lime wedges on the side!
