quick & easy Spiced Shrimp Fried Rice

Faster than take-out, this spiced shrimp fried rice is so flavorful and easy to make! Everyone loves it, even the picky eaters!


Mix the Ingredients

In a bowl, place shrimp & add cornstarch, paprika, cumin, salt & pepper. Mix well.


Cook the Shrimp

Heat a skillet & add 1 tb of oil & heat it for 30 secs. Once oil is hot, add spiced shrimp. Cook for a min & flip. Cook for another min. Transfer into a plate.


Stir in the Rice

Add 1 tb of oil & heat it. Add carrots & peas & cook. Stir in cold leftover rice. Let it sit for a min & then break it up, mixing with the vegetables.


Scramble the Eggs

Push the rice & vegetables to the sides, making a well in the middle. Add the remaining 1 tb of oil. Once heated, crack 3 eggs & scramble in the middle.


Mix Eggs & Rice

Once the eggs are mostly cooked, stir with rice & vegetables. Add sliced greens of green onions. 


Add the Shrimp

Season with soy sauce & sesame oil. And lastly, stir in cooked shrimp. Serve immediately.
