Cook the elbow noodles Drain & rinse under cold water to stop the cooking process. Set aside.

In a large mixing bowl, combine all the ingredients except the paprika & mix until well combined.

Cover the salad with plastic wrap & refrigerate for at least 1 hour, or preferably 2-3 hours, to allow the flavors to meld.

Give the salad a gentle stir, garnish with paprika, if desired, & enjoy it cold.
