Update your usual fried rice game with this vegetable fried rice. Not your typical fried rice, but you'll be begging for seconds!


small sweet potato  small zucchini scallions olive oil garlic clove  –  cooked white rice frozen edamame –  regular soy sauce –  sesame oil Salt to taste

Prepare Ingredients

Grate sweet potato, or carrot on box grater. Dice the zucchini & slice the scallions. In a large skillet, heat the olive oil over medium high heat.


Cook the Veggies

Add garlic & white part of scallions. Cook until fragrant. Add sweet potato. Cook until sweet potato is softened, 3-5 mins. Stir in zucchini & cook for another 2 mins.


Add Rice

Add cooked rice, edamame & green part of scallions & stir. Add soy sauce & sesame oil & cook for about 3 mins, stirring frequently. Salt to taste.
