quick & easy INSTANT POT VEGETABLE SPAGHETTI

This Instant Pot Vegetable Spaghetti is a satisfying comfort food & family favorite any day. Use any vegetables you have, even frozen vegetables will do!

Sauté the Mushrooms

Set the Instant Pot to Sauté. When the display reads “HOT”, add olive oil. Once oil is add mushrooms & sauté for about 4 mins, stirring frequently.

Add the Vegetables

Add the remaining vegetables & continue to cook for couple of mins. Stir in basil paste & garlic.

Add the Noodles

Break spaghetti in half & layer in criss cross pattern over the vegetables. Add water & pasta sauce over the noodles.

Pressure Cook

Close the lid & make sure the valve is set to “sealing”. Set the Instant Pot to Pressure Cook/Manual for 4 mins on high.

Stir the Spaghetti 

Do quick release by carefully turning the valve to venting & carefully open the lid. Stir everything.

Serve

Serve with freshly grated parmesan cheese.
