With a few kitchen shortcuts, this shepherd's pie recipe is ready in under 45 minutes! Savory ground beef and veggies are topped with mashed potatoes, then baked until golden. It's an easy and comforting weeknight dinner.

Ingredients

2cupsprepared brown gravystore bought or homemade
4cupsinstant mashed potatoesor homemade
Instructions
Preheat the oven to 400℉ and prepare a 9x11in baking dish with nonstick cooking spray.
In a large (12in) skillet, melt the butter over medium heat. Add the onions and pea/carrot mix, saute on medium high heat for 5 minutes. Add the Ground beef, salt, pepper, rosemary, thyme and garlic. Brown the beef and break it up using a wooden spatula. Cook until no longer pink.
To the beef mixture, add the 2 cups of prepared brown gravy, then lower the heat to medium low and simmer for 5 minutes until slightly reduced and thickened. Remove from the heat.
Add the beef mixture to the prepared baking dish and spread it around evenly. Top with the prepared mashed potatoes and spread evenly to cover.
To prevent any overflow, place the baking dish on a sheet pan. Bake at 400℉ for 20 minutes or until bubbling on the sides and the mashed potatoes are light golden brown on top.
Let sit for 15 minutes before serving. Enjoy!

Note 1: You can add 1/4 cup of frozen corn if desired, or use a veggie mix that includes corn. Note 2: You can also try 1 pound of ground beef and 1 pound of ground lamb if you like! Storing Tips: - Store leftover shepherds pie in the refrigerator in an airtight container for up to 3 days. Reheat in a microwave safe container until hot throughout. - Shepherd's pie can be frozen, but the texture of the potatoes may get grainy. If you plan to freeze it, it's best to use a lot of butter in your mash! Extra fat helps the potatoes stay smooth and creamy once defrosted. - Freeze the casserole in an oven-safe container and bake from frozen in the oven at 350 degrees until hot and bubbly, around 1 hour.
