Instructions
Cut the potatoes into 1-inch cubes. Place in a large bowl with cold water. Make sure all the potatoes are submerged, cover, and let them soak for at least 1 hour, or up to overnight.
Drain the potatoes and thoroughly pat them dry with a paper towel.
Toss the potatoes with olive oil, seasoning, and salt.
Transfer the potatoes to the air fryer basket. Roast for 30-40 min at 370F, or until nice and golden and soft, stirring every 15 minutes or so. (Exact cooking time depends on the potato size and how many potatoes you have. Smaller potatoes cook faster, and so do fewer potatoes.)

Note 1: Any type of potato works for this cooking. I love russet potatoes for their crispy exterior and fluffy inside. Red potatoes also work wonderfully.Note 2: Feel free to use any seasoning you like. I personally love roasted garlic and herb seasoning for roasted potatoes.Storing Tips: - Store: Let the air fried potatoes cool completely, then transfer them to an airtight container and refrigerate for up to 4 days. - Reheat: Preheat your air fryer to 370 degrees, then transfer the potatoes to the air fryer basket. Reheat until hot and crispy, about 4 to 6 minutes. - Freeze: Roasted potatoes are freezer-friendly! Transfer the potatoes to a zip-top bag and squeeze out as much air as possible. For best results, use within 4 months of freezing.
