Ingredients
  

  • 8 oz leftover cooked steak sliced into thin strips, Note 1
  • 6 oz romaine lettuce Note 2
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • ½ cup sliced cucumber
  • ¼ cup thinly sliced red onion
  • ¼ cup crumbled feta cheese
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh parsley finely chopped
  • 3 tablespoons extra-virgin olive oil
  • 1 ½ tablespoons balsamic vinegar
  • 1 teaspoon salt

Instructions
 

  • In a small bowl, whisk together the olive oil, balsamic vinegar, and salt, to make the dressing.

  • In a large bowl, combine the salad greens, cherry tomatoes, avocado, cucumber, red onion, feta cheese, and fresh herbs.
    6 oz romaine lettuce, 1 cup cherry tomatoes, 1 avocado, ½ cup sliced cucumber, ¼ cup thinly sliced red onion, ¼ cup crumbled feta cheese, 1 tablespoon fresh dill, 1 tablespoon fresh parsley
  • Add the sliced steak to the salad bowl and drizzle the dressing over the top.

  • Toss everything together until well combined.
  • Serve the leftover steak salad immediately and enjoy.

Notes

Note 1: When it comes to steak salad, there are several cuts that work well. Some popular choices include strip steak, ribeye, flank steak, or sirloin steak. These cuts are flavorful and can be cooked to your desired doneness before being sliced and added to the salad.
Note 2: Crisp and sturdy lettuces like romaine, iceberg, or butter lettuce can provide a good base for the salad. They hold up well to the weight of the steak and other toppings. However, feel free to use any lettuce or mixed greens.
Vegetable Substitutions: There are many delicious toppings that can complement a steak salad. For example, roasted vegetables like bell peppers or asparagus, sweet corn, croutons for added crunch, caramelized onions, sliced radishes, or even fresh berries for a touch of sweetness.  Feel free to get creative and experiment with different flavors and textures.
Other toppings: You can also use goat cheese or blue cheese in place of feta cheese. And for added texture, sprinkle some pepitas, sunflower seeds, or toasted sesame seeds.

- Prepare the salad ingredients in advance, and store them in separate containers in the fridge for 1-2 days.
