These one-skillet cilantro lime chicken thighs are made in only 30 minutes. This foolproof healthy chicken recipe is bursting with bright flavors. It's an easy weeknight dinner that's one of our family favorites in the summertime.
Ingredients

1-2tablespoonschopped fresh cilantro
4garlic clovesminced

Instructions
Zest and juice the lime. You should have 2-3 tablespoons of lime juice.

In a small bowl, combine brown sugar, cumin, smoked paprika, and salt.

Season the chicken thighs with the prepared seasoning.

Heat a large skillet over medium-high heat. Once hot, add olive oil and chicken.

Cook the chicken for 5-6 minutes, or until nicely browned on the outside. Remove onto a clean plate and cover. (The chicken doesn’t have to be cooked through.)
Deglaze the now-empty skillet with the broth, scraping the brown bits with a wooden spoon.

Add lime juice, zest, cilantro, and garlic. Bring to a boil.
Now add the chicken back in and cook the chicken in the sauce, uncovered, for about 10 minutes, or until the internal temperature reaches 175-180°F.
Off heat, stir in the butter to the sauce.

Note 1: Chicken breasts will also work in this recipe. Since chicken breasts are usually thicker than chicken thighs, you’ll need to pound them out to about 1 inch thick. Then, adjust the cooking time if needed. Storage Tips: - Store leftovers in an airtight container in the refrigerator for 3-4 days. - Freeze for up to 2 months. - Reheat leftover chicken and sauce in a skillet over low heat until warmed through.
