We’re always looking for new breakfast recipes that are creative, delicious, and anything but boring. We recently made these breakfast sliders for a Sunday brunch, and they were a huge hit. They’re also definitely on our back to school meal prep list because they’re simple to freeze and reheat.
Our inspiration for the recipe was our bbq chicken sliders, we wanted to try creating the breakfast version as a solution for entertaining guests. - Large eggs – The protein base of the sandwich
- Slider rolls – We love any slider rolls that are connected such as the brioche rolls, soft dinner rolls, or Hawaiian sweet rolls.
- Pepper Jack cheese slices – Adds all the gooeyness and a hint of spice too.
- Slices of ham – You can buy thick or thin cut ham here. If you use thin cut, you may need a few slices in the center of the sandwich.
- Cheddar cheese slices – Additional cheese to make them extra cheesy.
- Unsalted butter – For toasting the rolls in the oven and the base to the garlic butter.
- Garlic paste – Infuses the butter with the great garlic flavor to brush on top of the rolls before baking.
- Chopped parsley – Adds a nice hint of green and herbal flavor.

How to make this breakfast sliders recipe

Step 1: Preheat the oven to 350°F. Spray a quarter-sheet pan with nonstick spray.
In a large bowl, whisk the eggs, salt, pepper, and 1 tablespoon of water.

Step 2: Pour the egg mixture into the prepared baking sheet.
Bake for 8-10 minutes, or until just cooked through.

Step 3: In a small bowl, combine the melted butter, garlic, parsley, and salt.

Step 4: Spray a 9×13 baking dish with non-stick spray.
Using a serrated knife, slice the slider rolls in half lengthwise.
Smear 2 tablespoons of butter on the bottom half of the slider rolls and place it in the prepared baking dish.

Step 5: Place the cooked egg layer over the bread.

Step 6: Then place pepper jack cheese, followed by ham and cheddar cheese.

Step 7: Place the top of the slider rolls. Brush on the garlic butter all over the bread. And cover the dish with a foil.

Step 8: Bake for 15-20 minutes, or until cheese is melted.
Expert Tips:
- Don’t overcook the eggs. We cook them in a sheet pan for ease. You want to make sure you cook them for no longer than 10 minutes or they can become tough and rubbery. If you desire, you can make them on the stovetop in a nonstick skillet.
- Make sure you use a serrated knife for easy cutting of the slider rolls. This helps them remain together and connected which makes it so much easier for baking in a standard baking dish.
- Customize with your favorite ingredients. Swap the ham for cooked sausage or sausage patties, extra crispy bacon, or omit just for an egg and cheese slider. Add hot sauce if desired as well as a thin layer of your favorite jam.
- Be sure to cover the rolls with foil when baking. This will prevent the rolls from drying out to much in the oven and becoming hard.

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or toaster oven for a few minutes until warmed through and the bread on top is toasted.
